With more than 15 years culinary experience in Japanese cuisine, Chef Jems Bong heads the Japanese kitchen of Grand Hyatt Singapore’s flagship restaurant mezza9. Often mistaken for being Japanese, Singaporean Chef Jems first discovered his passion by watching traditional Japanese movies. He was fascinated by the respect, pride and art that is dedicated to this cuisine and decided that this was the path he wanted to pursue in his life. His kitchen rules are simple: hygiene, presentation, quality of food and mutual respect.
